Cultivated in the cold northern climate of Iwate Prefecture, Snow-Aged Carrots are grown through autumn and left to mature beneath a blanket of snow during winter. To survive the freezing conditions, the carrots naturally convert stored starch into sugar, concentrating sweetness and deepening flavor while remaining remarkably crisp and juicy.
When cooked, Snow-Aged Carrots reveal a tender texture and a mellow, rounded sweetness with no sharpness. Their gentle earthiness and natural sugars make them especially suited to winter cooking, where they add warmth and depth to seasonal dishes.
