Carefully cultivated and picked while still bite-sized, each eggplant develops a smooth, glossy deep-purple skin that is remarkably thin and soft. Unlike mature eggplants, the skin requires no peeling, while the flesh remains fine-textured, moist, and naturally mild with very little bitterness.
