How to Enjoy Banpeiyu Sweeter

  • Rest before cutting: If the aroma is faint, keep it in a cool, dark, ventilated place (not the fridge) for 3–7 days until it smells more fragrant and the peel gives slightly when pressed.

  • Remove pith & membranes: Peel off the thick rind and as much white pith as possible, then remove the segment membrane and eat only the flesh—this reduces bitterness and makes sweetness taste cleaner.

  • Boost sweetness (optional): Add a tiny pinch of salt, or a light dusting of sugar. For dessert service, coat with a little honey + a few drops of lemon for 10–20 minutes.

  • Don’t serve ice-cold: Chill briefly (30–60 min) or let refrigerated fruit sit 5–10 min before eating to bring back aroma.

Banpeiyu, a specialty of Kumamoto Prefecture, is one of the world’s largest citrus fruits and is cultivated mainly in the Yatsushiro area. It is valued for its distinctive, refreshing aroma and its clean, light balance of sweetness and acidity, making it a popular choice for seasonal gifts. The flesh is juicy and satisfying, and the thick peel is also used for processed products such as candied peel.

  • Size: A world-class large citrus, about 25 cm in diameter, with some fruit weighing over 2 kg.

  • Aroma: Fresh and elegant. If kept for about one month after harvest, the fragrance can become even more enjoyable.

  • Taste & texture: The flesh has a pleasantly crisp bite, with a well-balanced sweetness and acidity.

  • Uses beyond fresh fruit: The thick peel can be made into candied peel or marmalade, and the white pith is also used for traditional sweets such as zabon-zuke.
