Description
Dadacha-mame is a celebrated edamame variety from the Shonai region of Yamagata Prefecture, often praised as the “King of Edamame” for its exceptional flavor and aroma.

Cultivated in fertile soil with pure water and nurtured by the region’s distinct day–night temperature differences, Dadacha-mame develops a rich umami and natural sweetness that set it apart from ordinary edamame. Each pod is plump and full, delivering a satisfying bite with a nutty fragrance and deep, lingering taste.

Procedure:
Store edamame as they are without washing (washing makes them more susceptible to damage by moisture).
Wrap edamame in newspaper or paper towels and store in plastic bags or storage containers in the vegetable compartment of the refrigerator.

How to boil edamame for best results

Ingredients:
・Fresh or frozen edamame (soybeans in pods)
・Water
・Salt


Instructions:
Preparation:
If using fresh edamame, rinse them thoroughly under cold water.

Boiling:
Bring a large pot of water to a boil. For every 1 cup (about 150 grams) of edamame, use about 4 cups (1 liter) of water.
Add a generous amount of salt to the boiling water. The water should be salty, similar to seawater (about 1-2 tablespoons per liter of water).

Cooking:
Add the edamame to the boiling water.
Boil the edamame for 3-5 minutes if fresh, or 5-7 minutes if frozen. The exact time will depend on the size and freshness of the edamame. They should be tender but still slightly firm.

If you prefer a more intense flavor, you can briefly soak the edamame in the salted boiling water off the heat before draining.

Edamame is actually very hard to harvest.
