Relative of Enoki mushroom, this yama enoki mushroom is also known as Brown Enoki. Compared to normal enoki, it is not too bitter but little sweeter. The texture is slightly harder than normal enoki as well. You can grill, cook in miso soup, tsukudani, or you can even boil it and add some ponzu sauce.
