Using the natural activity of lactic acid bacteria and yeast, this sake develops the deep richness and poised acidity characteristic of the traditional yamahai method. The rounded sweetness and generous umami of Omachi sake rice create a structured, elegant flavour with lasting depth.

The name Jidai Okure means “behind the times.” While the sake is rooted in an old and time-intensive brewing method, its purpose is not simply to recreate the past.

Instead, it reflects Toshimori Sake Brewery’s ambition to use traditional techniques to create sake for the next generation.

Founded in 1868 in Akaiwa, Okayama, Toshimori Sake Brewery is known for its deep connection to Omachi rice.

In the late 1970s, when Omachi had become a nearly lost “phantom” sake rice, the brewery worked with local farmers to help restore its cultivation. This commitment reflects the uncompromising spirit behind the name Sake Hitosuji.
