1. Daikoku Hon Shimeji
The unique feature of Daikoku Hon Shimeji mushrooms is that they are plumper and larger than regular shimaji mushrooms, witha s pleasantly firmand plump texture.
2. Black Awabi Mushroom
Black awabi mushrooms have a deep, rich umami flavor, akin to the savory taste found in abalone, making it a vegetarian-friendly alternative for dishes that traditinally include seafood.
3. Yamabushi-Take
Shimofuri-Take is easily recognisable by its shaggy, pom-pom-like appearance, with cascading spines resembling a lion's mane, hence the English name. It typically has a creamy white to pale yellow colour.
4. Shimofuri Hiratake
Shimofuri-Take is a firm, slightly chewy texture, similar to premium meat cuts, which is why it's often compared to Wagyu beef in texture.
