01 / The fruit story behind the miso

It started with a remarkable apple.

In Aomori, Akinori Kimura spent years pursuing what was considered difficult: growing apples without pesticides. His success became known as the story of Japan’s “Miracle Apples”.

Inspired by his approach, farmers learned from Kimura and carried his natural farming methods into rice and soybean cultivation. Their harvests became the ingredients for Kiseki Miso.

A shared farming philosophy connects the apples and the miso. The miso itself is made with rice, soybeans and salt.
