How to Make Persimmon Liqueur

Remove any persimmons with large bruises or damage

Wash gently and dry thoroughly with a paper towel

Cut into halves or quarters (remove seeds if desired)

Layer the persimmons and rock sugar alternately in a jar

Gently pour in sake and store in a dark, stable place below 30°C for about 3 months

After about 3 months, remove the persimmons — your liqueur is ready to enjoy
