The brewing rice used is "Iwai," a premium sake rice grown in Kyoto, making this an all-Kyoto junmai sake.
Embracing freedom and innovation, we crafted this sake to perfectly complement the unique characteristics of this yeast.
The four-stage brewing process and genshu method bring out a robust body with the rich flavors and sweetness of the rice. The long-term, ultra-low temperature fermentation results in a clear aroma and a refreshing sensation that harmonizes beautifully.
