This cheese is made from single-origin milk produced at Nanami Farm in Sarabetsu, Tokachi, and aged for over 10 months. 
It offers a rich umami flavor with a fluffy, firm texture. 
The extended aging process concentrates the umami, creating a deeply aromatic taste. Grating it over white fish carpaccio enhances the dish with its savory depth. 
It pairs wonderfully with red wine, hard liquor, and espresso.
