At its core is miso brewed by Ishii Miso, a family-run producer in Nagano Prefecture established in 1868. Using only Japanese-grown soybeans and pristine spring water from Matsumoto, their miso is naturally aged in cedar barrels through three full years—passing through summer and winter to develop layered umami, mellow sweetness, and refined aroma.
