What is SHIMUFURI HAKUSAI?

Shimofuri (Frosting) Hakusai is brand hakusai that is exposed to frosting-cold tempreature.
When it's exposed, hakusai itself tries to shift its leaf-starch into glucose. This helps to make it super sweet.

Because exposing to the actual frost several times may damage the hakusai, it takes much manpower and commitment to find the best timing of exposure.
