From Wakayama, Japan’s top persimmon region, comes Anpo-gaki — semi-dried persimmons crafted with care and tradition. Made only from the local Hira-tanenashi variety, these seedless fruits are grown with low-pesticide, sustainable farming near Mount Kōya and carefully hand-processed — harvested, peeled, and slowly air-dried to perfection.
Through this natural drying, moisture evaporates and sweetness intensifies, reaching a brix level of 40–50, similar to yokan (sweet bean jelly), yet without any added sugar. This pure transformation represents the Japanese belief that “the truest wagashi sweetness comes from dried persimmons.”
The result is a luxuriously soft, amber-colored fruit — glossy on the outside, tender inside like a soft-boiled egg. The flavor unfolds with refined natural sweetness and subtle depth, offering a delicate, clean finish that feels both traditional and modern.
