✨ What Makes Hakata Fukuichi Mentaiko Special?
01 — A Signature Seasoning Created by a Japanese Cuisine Craftsman
The defining character of this mentaiko comes from Hakata Fukuichi’s carefully developed seasoning liquid.
Created by a craftsman experienced in Japanese cuisine, the recipe begins with thoughtfully selected ingredients and incorporates the savoury depth of bonito dashi. It is designed to complement the natural flavour of the roe while creating a refined balance of umami, saltiness and chilli heat.
02 — Adjusted to the Conditions of Each Day
The seasoning process does not rely on measurements alone.
Experienced craftsmen adjust the amount of seasoning and salt according to the condition of the roe, as well as the temperature and humidity on the day of production. This close attention allows every batch to achieve Hakata Fukuichi’s signature mellow and well-balanced flavour.
03 — Slowly Matured at Low Temperature
After seasoning, the roe is slowly matured at temperatures close to freezing.
This patient process allows the flavour to penetrate evenly while preserving the roe’s distinctive grainy texture. The result is mentaiko with deep savoury character and a gentle heat that develops pleasantly on the palate.
🍚 The Quality of Whole Roe in a Convenient Cut
Medium-cut mentaiko consists of roe that becomes separated or cut during preparation. While the shape differs from whole roe, it retains the same seasoning, quality and characteristic flavour.
The pieces are already conveniently sized, making them easy to serve with rice or use in cooking—without needing to cut a whole roe sac yourself.
