Hakata Fukuichi’s seasoned pollock roe is removed from its membrane, making it easy to spoon, portion and mix directly into your favourite dishes. Packed in two separate 500g bags, this generous 1kg format is ideal for families, frequent mentaiko lovers, entertaining, meal preparation and foodservice use.

✨ What Makes Tsubukko Special?

01 — Pure Seasoned Roe, without the Membrane

Tsubukko is a loose-roe mentaiko consisting of the flavourful individual grains separated from their outer membrane.

Its soft, spoonable texture makes it particularly easy to measure and incorporate evenly into sauces, fillings and prepared dishes. There is no need to cut the roe or remove the membrane before cooking.

02 — A Signature Seasoning Created by a Japanese Cuisine Craftsman

The distinctive flavour comes from a specially prepared seasoning liquid developed by a craftsman experienced in Japanese cuisine.

Made with carefully selected ingredients and the savoury depth of bonito dashi, it enhances the roe’s natural umami while balancing saltiness and chilli heat.

03 — Adjusted to Each Batch and Day’s Conditions

Hakata Fukuichi’s craftsmen carefully assess the condition of the roe and finely adjust the seasoning and salt balance according to the temperature and humidity on the day of production.

This close attention helps create the maker’s signature mellow flavour, in which the chilli heat complements the roe without overpowering its savoury character.

04 — Slowly Matured at Low Temperature

After seasoning, the roe is slowly matured at temperatures close to freezing.

This patient process allows the flavour to develop evenly, drawing out the natural umami and richness of the roe while creating its vivid, appetising appearance.

📦 Two Separate Bags for Easier Portion Management

The total 1kg quantity is divided into two 500g bags, making a generous pack easier to manage.

Thaw one bag for immediate use while keeping the second bag frozen for another occasion. This format is particularly convenient for households that cook with mentaiko regularly, as well as kitchens that require consistent portions for multiple dishes.

Once thawed, do not refreeze.

🍝 Made for Mixing, Topping and Cooking

The loose format distributes easily throughout a dish, making Tsubukko especially useful for:

  • Mentaiko pasta
Mix directly with butter, cream or olive oil for a rich Japanese-style pasta sauce.

  • Onigiri
Spoon into rice balls as a savoury, gently spicy filling.

  • Rice and ochazuke
Serve over warm rice or add to ochazuke for comforting umami.

  • Omelettes and egg dishes
Fold into beaten egg or use as a colourful, flavourful topping.

  • Sushi and hand rolls
Portion easily into maki, gunkan or temaki.

  • Bread and toast
Combine with mayonnaise or butter before spreading over bread.

  • Salads and vegetables
Use in dressings or creamy sauces to add savoury depth and gentle heat.

🥄 Two Easy Mentaiko Staples

Mentaiko Mayonnaise

Mix the loose roe with mayonnaise to create a creamy, savoury sauce. Enjoy it with salads, sushi, fried foods, vegetables or bread.

Mentaiko Butter

Blend with softened butter for a rich spread with gentle chilli warmth. Use it on toast, baked potatoes, pasta or grilled vegetables.

Prepare only the amount needed and keep refrigerated until serving.

👨🍳 Practical for Home and Professional Kitchens

Since it can be measured directly with a spoon, Tsubukko allows the amount of mentaiko to be adjusted according to each recipe.

The generous quantity and flexible format make it suitable for:

  • Regular family meals

  • Batch cooking and meal preparation

  • Parties and entertaining

  • Restaurants and cafés

  • Catering and foodservice

  • Mentaiko sauces, fillings and prepared foods
