Hakata Fukuichi Light Colour Loose-Roe Karashi Mentaiko 1kg – 500g × 2 Bags

Enjoy Hakata Fukuichi’s gently spicy karashi mentaiko in a versatile loose-roe format with a refined, lighter appearance.

Removed from its outer membrane, the seasoned roe can be spooned, measured and mixed directly into food. The generous 1kg pack is divided into two 500g bags, making it practical for regular home cooking, entertaining, meal preparation and foodservice use.

✨ What Makes This Loose-Roe Mentaiko Special?

01 — A Refined, Lighter Appearance

This mentaiko has a lighter, more understated appearance that blends naturally into a wide range of dishes.

It adds the savoury depth and gentle heat of Hakata mentaiko without visually overpowering pale sauces, omelettes, sushi rice or delicately presented dishes.

02 — Pure Seasoned Roe, Ready to Use

The flavourful individual grains have already been separated from the outer membrane.

There is no need to slice the roe or remove the membrane before cooking. Simply spoon out the quantity required and use it as a topping, filling, sauce ingredient or seasoning.

03 — A Signature Seasoning Created by a Japanese Cuisine Craftsman

The distinctive flavour begins with a specially prepared seasoning liquid developed by a craftsman experienced in Japanese cuisine.

Made with carefully selected ingredients and the savoury depth of bonito dashi, it complements the roe’s natural flavour while creating a mellow balance of umami, saltiness and chilli heat.

04 — Adjusted to Each Day’s Conditions

Hakata Fukuichi’s craftsmen carefully assess the condition of the roe and finely adjust the amount of seasoning and salt according to the temperature and humidity on the day of production.

This close attention helps maintain the maker’s characteristic balance even as the condition of the natural ingredients changes.

05 — Slowly Matured at Low Temperature

After seasoning, the roe is slowly matured at temperatures close to freezing.

This patient process allows the seasoning to develop evenly and brings out the roe’s natural richness. The heat remains gentle, allowing its savoury umami to stay at the centre of the experience.

📦 Two Separate Bags for Easier Portion Management

The total quantity is divided into two individual 500g bags.

Thaw one bag for immediate use while keeping the second bag frozen for another occasion. This makes the generous 1kg pack easier to manage for households, restaurants and food preparation kitchens.

Once thawed, do not refreeze.

🍝 Made for Mixing, Topping and Cooking

The loose-roe format distributes evenly throughout sauces, fillings and prepared dishes.

  • Mentaiko pasta
Mix directly with butter, cream or olive oil for a smooth Japanese-style pasta sauce.

  • Steamed rice and ochazuke
Spoon over warm rice or add to ochazuke for savoury flavour and gentle heat.

  • Onigiri

  • Sushi and hand rolls
Portion easily into maki, gunkan or temaki.

  • Bread and toast

  • Salads and vegetables
