At the pinnacle of Kunpeki’s craft stands this exceptional Junmai Daiginjo, brewed in small quantities with the utmost care and devotion by fourth-generation toji Kōyasu Murase.
Crafted from Okayama-grown Yamada Nishiki rice, polished down to 40%, and brewed with the pure underground waters of the Kiso River, this sake uses aromatic No.10 yeast to enhance its refined bouquet. Bottled undiluted and unfiltered, it is slowly matured at low temperatures, allowing the elegant fragrance and deep umami of Yamada Nishiki to unfold in perfect harmony.
