What is Ninben?
1699Ninben, famous for "Katsuobushi", was founded more than 300 years ago, in 1699, by Ihee Takatsu. When he moved to Edo in 1691 from his home town in Mie pref, he became the apprentice of a grain trader named Tarokichi Aburaya. It was in 1699 when he began trading in Katsuobushi and shioboshi (salted and dried fish) in Nihonbashi, Tokyo. This was the very beginning of the company.
1979Ninben was awarded the Emperor's Prize at the 18th Agricultural, Forestry, and Fisheries Festival for the development of the Katsuobushi Fresh Pack, and for its contribution to the expansion of the industry and promotion of stable management in the bonito fishing industry.
What is "Katsuobushi" ?
Katsuobushiis a fermented food product unique to Japan, which is also known as dried bonito shavings. The so-called "dashi" soup stock made using Katsuobushi is the fundamental base of Japanese cuisine. Katsuobushi is a key ingredient in healthy, savory and highly diversified Japanese cuisine.
