Unlike regular soy sauce, Nama-age Shoyu is unpasteurized — it is not heat-treated after pressing.
This preserves its living enzymes, fresh aroma, and complex flavor.

Brewed in traditional wooden vats and naturally aged for over a year, it offers a vibrant, “living” taste that regular soy sauce cannot match.

From Waste to Flavor — Special Spice Made from Moromi Lees

This unique spice is crafted from moromi lees, the byproduct of soy sauce pressing, that would otherwise be discarded.

By carefully drying and blending them with select ingredients, we’ve created a rich, savory seasoning that adds depth and umami to any dish — while reducing food waste.

Founded as a Soy Sauce Brewer

Our story began in Ōmama during the Edo period, producing soy sauce and selling household goods.
2004

Opening of Creative Cuisine Restaurant “Tenchu”

We opened Tenchu, a restaurant offering original dishes that showcase the depth of our soy sauce flavors.
2013

Cultural Property Registration

Our Ōmama factory’s main building and Bunko Storehouse were registered as National Tangible Cultural Properties by the Japanese government.
2017

230th Anniversary Celebration

We held a special event to commemorate 230 years of continuous craftsmanship and tradition in soy sauce brewing.
