Miyazaki Prefecture is renowned for its kumquat production, aiming to be the best in Japan both in quantity and quality. It accounts for over 60% of the nation's kumquat output, making it number one in the country. Not only is the focus on volume, but quality is also a top priority.
Fully ripened kumquats can be eaten "raw" and "with the skin." Cultivated in greenhouses and left to ripen on the tree for over 210 days, these kumquats boast superior taste and appearance. This process eliminates the characteristic bitter compounds of kumquats, resulting in "larger" and "sweeter" fruits.
