The udon noodles are made by the careful handiwork of craftsmen using our original "multi-stage stretching method," which involves four stages of stretching and seven degrees of ripening, all three of which are now rare in Japan. We also purchase wakame seaweed sprouts from Naruto Straits directly from a local fisherman (a friend of our president) and knead them into our hand-pulled udon noodles. The noodles are so firm that only real hand-pulled udon noodles can be used not only as cola udon but also as meat udon, kitsune udon, and udon simmered as the end of a hot pot. The noodles have a firmer texture than regular white noodles, and the aroma of the sea spreads. Since it is kneaded with a lot of Brussels sprouts, it contains 2.6 grams of dietary fiber per 100 grams of raw noodles. It was the first noodle to win the Osaka Governor's Award, the bronze prize, at the 54th National Seafood Processing and Food Exhibition held every year in Osaka.
