“Setchu-maizo (雪中埋蔵)” is a famous and unique way of manufacturing sake. Freshly squeezed Junmai Ginjo sake brewed with 100% Miyama Nishiki, which is hand-salted by a local farmer, is bottled as it is fresh. It is then buried under the snow to mature for 90 days to achieve fine and well-rounded taste.

The real Sake meaning
Sake is a Japanese word that refers to alcohol in general. Non-Japanese usually refer to "sake" as the specific alcoholic drink made from fermented rice which the rice has been polished to remove the bran. In Japan, people call this drink nihonshu (to differentiate it from "sake" which in Japanese can also refer to alcohol in general).

You can have it on its own to go with your meal or unwind at the end of the day with a sake cocktail.
