Kohaku-Namasu Recipe

Kohaku-Namasu (Red and white salad)

---"Kohaku" means red and white.They represent "celebrations".---

[INGREDIENTS](4 servings)

1/5 of a Daikon
1/5 of a Carrot
1/2 tsp salt

Broth

1.5 tbsp sugar
2.5 tbsp vinegar
 ・7cm×10cm  kombu
A hundful of roasted sesami

 1. Place sugar,vinegar,kombu,and water in a pot,and bring to a boil. Remove from heat once boiling.
2. Peel and slice Daikon and Carrot into thin matchsticks.
3. Add each 1/4 tsp salt on Daikon and Carrot. Leave them for 15-30 minutes,after mixing them.
