1. Remove the lower root end of the enoki stems. Wash the mushrooms and pat them dry.

2. Blanch the enoki mushrooms, drain off the water and transfer them to your serving plate.
3. Heat oil in a small saucepan, add chopped garlic and cook for about 15 seconds. Add light soy sauce, sugar, and scallions.
4. Bring the sauce to a boil then turn off the heat. Slowly pour the sauce over the enoki mushrooms and serve.
